Pumpkin sheet Cake




Pumpkin sheet cake    Preheat oven 350, spray 15x11 sheet pan

2 Cups all purpose flour
2 Cups sugar
1 tsp. baking soda
2 tsp. baking powder
1/2 tsp. salt
4 eggs
2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. powdered ginger
1 (16oz) can pumpkin puree, NOT PUMPKIN PIE FILLING
1 Cup oil
Mix all ingredients and bake 15-20 minutes (till toothpick comes out clean when testing the middle)
Frost with Cream Cheese Frosting (recipe follows.)

Cream Cheese Frosting
1 8oz. package cream cheese (softened)
1 stick of butter (softened)
2 tsp. vanilla
1 box powdered sugar
In blender with whisk attachment place cream cheese and butter. Whip together till light and well blended. Add vanilla and powdered sugar. Whip till well blended and light. When cake has cooled frost.
