Hot Spinach-Artichoke Dip





This is absolutely humming yummy. We love this. It is on our snack list for movie nights. Give it a try. You won't regret it. We eat it with tortilla chips.

Hot Spinach-Artichoke Dip
1 (10oz.) package frozen chopped spinach
2(13 3/4 oz.) cans artichoke hearts, NOT MARINATED!
1/2 Cup Mayonnaise
1/2 Cup sour cream
1 Cup freshly grated Parmesan cheese
1 Cup grated Pepper Jack cheese

preheat oven to 350 F. Grease a casserole dish with non stick spray.
Heat the spinach up in a microwave oven on high for 5 minutes and squeeze dry (I also run a knife through it to break it up and chop it some.) Drain artichoke hearts and coarsely chop in a food processor. Combine all ingredients except the jack cheese in a large bowl. Stir well. Scrape into prepared casserole dish and sprinkle with jack cheese on top. Bake 30 minutes.

A word about cheese
Some people complain about the cheesy recipes looking curdled. If you buy pre-shredded cheese it is usually treated with something to keep it from sticking together. This can affect your creamy casseroles (mac and cheese, dips etc....) I would advise that you always buy your cheese in blocks and shred it yourself if you are using it in a casserole etc.....
