Blueberry Vinaigrette


This is simple and delicious. We serve it on field greens or the delicate butter lettuces with walnuts. Simple and so very good.

Blueberry Vinaigrette
1 Cup olive oil
1 Cup balsamic or red wine vinegar (I have always used Balsamic. Just our preference.)
1 Cup pure maple syrup
1 Cup blueberries (we buy huge bags of organic blueberries at Costco. These work great. Of course fresh is always wonderful.)
Salt and fresh cracked pepper to taste. Go light on this. 

.Throw everything in food processor or blender and blend till smooth. Season to taste with salt and pepper.
